¡Explosión de Sabor Chiapaneco!

La gastronomía mexicana  es conocida por tener riqueza de sabores, aromas y platillos diversos que enamoran a cualquier paladar. Por ello, en 2010 fue declarada por la UNESCO, Patrimonio Cultural Inmaterial de la Humanidad. 

Desde las entradas, platillos fuertes o postres, los platillos típicos mexicanos siempre están presentes en el mundo, pero sin duda alguna una de las culinarias más emblemáticas es la chiapaneca, ya que gracias a su riqueza natural los ingredientes utilizados son de la mejor calidad y generan el sabor característico de la región.

Entre sus delicias destacan muchos platillos que son un verdadero manjar, pero aquí nos limitaremos a hablar de los mas representativos, el queso de Ocosingo, el cochinito horneado, los tamales de bola, de postre unos ricos chimbos y para acompañar una bebida precolombina, tascalate, estos son platillos oriundos de la región y que han dejado con un buen sabor de boca a más de uno.

El cochinito horneado, es un platillo que se consume básicamente los días de fiesta en específico, en la fiesta llamada “fiesta grande” y consta de un cerdo horneado aderezado con salsa de chile ancho potenciado con especias y hierbas aromáticas, por su parte el queso de Ocosingo, o también llamado “queso fino” es elaborado con leche cuajada de vaca y sirve para acompañar alimentos o bien hacer algunos como el queso relleno, en el cual se hace un hueco en el centro y es ahí donde se puede poner diversos guisos.

Los tamales de bola son muy emblemáticos en la zona y de mucha importancia pues según textos encontrados, los mayas de ese lugar solían poner 3 o 4 tamales acompañando el entierro de sus muertos. Para su elaboración se utilizan dos tipos de masa de maíz de diferente textura, esta mezcla es lo que les da su exquisito sabor, además se añade chile simojovel, un chile chiapaneco, y al hacer el tamal se hace la forma de bola, por eso su nombre.

Por su parte, si lo que disfrutas más es el postre te recomendamos probar los chimbos, los cuales son un panecillo elaborado con harina y huevo, al enfriarse se le agrega miel y canela lo que los vuelve una buena opción para cerrar con broche de oro tu comida. Para acompañar todos los platillos anteriormente mencionados te recomendamos que pruebes el tascalate, una bebida prehispánica la cual es una mezcla de tortillas de maíz pulverizadas con cacao tostado y en polvo, saborizada con chile. Después se mezcla con agua para hacerla dulce, se recomienda tomarla lo más fría posible.
