En la esquina de la calle Viesca en la Alcaldía Iztapalapa está el puesto de Doña Juanita. Prepara platos todos los días y comidas especiales para fiestas o para las distintas celebraciones o invitaciones religiosas. Su menú va desde un suculento caldo de habas adornado con chile pasilla frito; ejotes con huevo o un arroz cocido.

Sin embargo, su platillo más famoso es un prodigioso taco que tiene en la sencillez su mejor característica: una tortilla untada de manteca de cerdo caliente y rellena de cebolla, jitomate y cilantro con sal. La combinación es genial.

Los especialistas aseguran en la superficie de toda la comida mexicana está el maíz, a él nos atenemos y él nos da sustento, es el compañero de todas las comidas, pues es plato, cuchara, envoltura, tostada, quesadilla, flauta, taco dorado, pozole, tamal de cazuela de todas las formas y los sabores prehispánicos del emblemático tamal. El maíz estará presente siempre que lo busquen en los puestos callejeros o en las casas.

Aquí enlistamos las preparaciones más deliciosas y 100% mexicanas:

  1. Quesadilla

Tortilla o masa de maíz rellena de queso gratinado libre elección solamente o bien con algún guisado al gusto, puede ser cocida al comal o frita.

  1. Enchiladas

Tortillas de maíz salteadas en aceite, rellenas regularmente de pollo, papa o frijoles, bañadas en alguna salsa acompañada de queso, crema y cebolla.

  1. Tamales

Masa de maíz rellena de algún guisado o fruta, envuelta en hoja de plátano o de mazorca, cocido al vapor.

  1. Pozole

Sopa de granos de maíz en caldo de jitomate con chile guajillo, puede ser acompañado de carne de res, puerco o pollo y otros ingredientes para realzar el sabor (cebolla, rábano, orégano, etc).
